





Whole Wheat Date and Walnut Cake
Ingredients :
- Milk - 1 cup
- Oil - 1/2 cup
- Caster Sugar - 3/4 cup
- Wheat Flour - 1 cup
- Baking Soda - 1tsp
- Seedless Dates - 10/12
- Chopped Walnuts - 1/2 cup
- Milk - 1-2tbsp (if required)
Method:
- Sift together soda and flour.
- Boil milk and soak dates for 10-15 mins.
- Blend dates and milk in a blender and puree the dates till pasty. Gently add oil and blend well.
- Mix in castor sugar and blend to thick shake like consistency. Pour the mixture in a large bowl. Fold in flour. Mix in half the walnuts.
- Pour the batter in a loaf tin of 9". Top with the reserved walnuts.
- Bake at 180 c for 45 mins or till done.
